I have quite a few varieties of porridge squares up on the blog now and I eat them so much that I am always thinking up new flavours! I also wanted to try them out as muffins as I thought that a crispy outside with a softer middle would be so amazing and I wasn’t wrong! These mango and coconut muffins may be one of my favourite yet! I now need to go back through all my old porridge square recipes and see if I can make them into muffins because they are just so good like this.
- 1 Mango
- 400g Jumbo oats
- 250ml Coconut Milk (from a tin mixed up)
- 100ml Maple syrup
- 5 tbsp Desiccated Coconut
- 3 tbsp Mango Puree (I used Biona apple and mango)
Preheat oven to 180 degrees celsius
Chop the mango into small chunks, removing the skin.
Add all the ingredients into a bowl and mix it together.
Spoon it into muffin tins (I used the silicone ones but if you don't have these grease or line your tin before spooning it in)
Bake in the oven for 30-40 minutes until the top is starting to go brown and slightly crispy.
Leave to cool in the tin.
