Obviously Christmas is a time for eating (right?!) but I do like to keep some of my snacks slightly less indulgent. These are such a great snack to have on hand for that 3pm dip in energy and the added spices make them taste really festive. They’re the perfect way to get in the christmas spirit, when you aren’t fancying a mince pie!
- 150g oats
- 8 dates (145g once pitted)
- 2 tablespoons (65g almond butter)
- 3 ½ teaspoons mixed spice
- 2 tablespoons melted coconut oil
- 150ml maple syrup
- 70g raisins
- 20g gojis
- 40g chopped apricots
- 45g chopped pecans
- 20g puffed oats (or puffed brown rice)
- 15g desiccated coconut
- 2 tablespoons coconut oil
- 3 tablespoons cacao powder
- 3 tablespoons maple syrup
- Pinch salt
Preheat the oven the 180 degrees celsius and line a baking tray with greaseproof paper.
Add the dates, coconut oil, nut butter, maple syrup and spices to the food processor and blend until smooth.
Add all of the dry ingredients to a big bowl and mix to combine.
Add in the blended mix and using a wooden spoon or your hands, mix until it is all combined.
Press this down into a lined and greased tin and bake for 15 minute.
Whilst these bake, Melt the coconut oil in a bain marie and add all of the other chocolate ingredients to make a smooth chocolate.
Once the bars are baked, leave to cool before slicing and drizzling with chocolate.
