It’s Mothers Day on Sunday, so I’ve got another recipe round-up for you! This is the day to spoil all the special women out there, and what better way to do it than through sweet treats! I’ve split this round-up into three parts. Firstly, brunch – the best way to start the day! Next, the celebration cakes to provide an impressive centre-piece. Then, of course, there’s dessert. I think Mothers Day comes at such a lovely time of year. It’s the beginning of Spring and the weather is getting warmer, so all of these recipes match the season, too!

Last Mothers Day, I shared a video of how to make my favourite Quinoa Bread, as I find it’s ideal for serving at brunch. It makes a great accompaniment to a cooked breakfast, with roast tomatoes, mushrooms and wilted spinach. However, my trusted toppings are always homemade guac with scrambled eggs! If you’re looking for a sweeter brunch (in true Livia’s Kitchen style!) then you can’t go wrong by whipping up a batch of these Lemon Drizzle Pancakes. Or, for something a bit different this Stone Fruit Crumble makes a wonderful, fruity breakfast. Any one of these recipes will make a really special treat, but if you’re planning on a big, celebratory brunch, then a sweet course followed by savoury is always the way to go!
To celebrate Mothers Day this year, I wanted to come up with an extra-special recipe. I decided that a celebration cake would be just perfect for this, as you really can’t celebrate Mothers Day without a delicious cake! The result was this Lemon and Vanilla layer cake which went up on the blog earlier this week – so there’s plenty of time to get any ingredients! Of course, everyone has their favourite kind of of cake and I’ve been working my way through recreating many of the classics. In the book, there’s a Baked Carrot Cake and a Coffee and Walnut Frosted Cake. On the blog, the Chocolate Peanut Butter Cake is such a crowd pleaser, which is why I love to make it for celebratory occasions.
These Blueberry and Lemon Tarts are my current dessert obsession! I think their zesty flavour makes them perfect for Mothers Day, plus the blueberry coulee on top gives them their pretty appearance. As I love lemon in desserts, the recipe for Lemon Mousse in the book would have to be another of my favourites. On the blog, my recommendation are these scrumptious Strawberry and Vanilla Cheesecakes. They’re super simple to put together, but make an impressive ending to a meal.
