Blueberry and Coconut Cookies

These are truly delicious. I think I’ve found the best flavour combination of vanilla, coconut and blueberries, especially when it’s in the form of a cookie! They’re perfectly crunchy and golden around the edges, with a slightly softer centre and blueberries running through. I love to give these to people who insist that oaty cookies are too breakfasty and not indulgent – I think this recipe definitely proves them wrong!

  • Preheat the oven to 180 degrees celsius and line a baking tray with greaseproof paper.

  • Mix all of the ingredients together in a bowl.

  • Shape into fairly flat cookies and bake for 20-25 minutes until golden brown.

  • Remove from the oven and allow to cook a little on the tray.
