Caramel Almond Swirl Cookie Ice ‘Cream’

We’ve created this recipe so that you can massively upgrade your favourite ice ‘cream’ with only two ingredients and in just five minutes. The Caramel Almond Swirl dip swirled through the creamy cashew ice ‘cream’ ensures you get so much deliciousness in every scoop and the pieces of Dunx cookies add a wonderful crunch. Once you’ve tried a bowl of this you won’t know how you used to live without it.

We made ours using Booja Booja vanilla ice cream. It’s cashew based so super creamy and made with only natural ingredients. In the UK you can buy it on Ocado, Waitrose, Whole Foods and Planet Organic!

ingredients

Ice 'Cream'

  • 3 packets of Caramel Almond Swirl Dunx
  • 2 500ml tubs of your favourite ice cream (left out of the freezer long enough to soften)

method
  • Scoop the caramel almond swirl dip from the Dunx into a small bowl and mix up so it’s really smooth.

  • Empty your ice cream into a separate large bowl and mix with a large spoon.

  • Next, chop up some Dunx cookies. We cut each cookie into 6/8 pieces.

  • Add the chopped cookies to the ice cream and drizzle over some of the caramel almond swirl. Fold the ice cream a few times with a spoon and then drizzle over the rest of the dip.

  • Put the ice cream in a loaf tin and pop in the freezer until you want to gobble it up!
