Chocolate Sandwich Cookies

This gluten free chocolate cookies recipe is so simple, but so delicious! And the creamy chocolate filling is just the best! We created this recipe from super simple and staple pantry ingredients, but it turned out so well. One of the best things about this recipe is that it is very child friendly. Which, is perfect for all of you busy mums that need to keep the little ones entertained!

We got all of our ingredients from Ocado, which is perfect as you can plan exactly what you are going to make and have it all delivered straight to your door! Whilst you are at it, why not give our almond and raisin cookies a go?

  • 150g oat flour - 1 + 1/2 cups
  • 60g ground almonds - 1/3 + 1/4 cup
  • 35g cacao powder - 4 tbsp
  • 40g coconut sugar - 1/3 cup
  • 100ml maple syrup - 1/2 cup
  • 30g cashew butter - 1 tbsp

Chocolate cream

  • 6 tbsp cashew butter
  • 2 tbsp cacao powder
  • 3 tbsp maple syrup
  • 2 tbsp almond milk
  • 1/2 tbsp coconut sugar
  • 1/2 tbsp coconut oil
40 minutes
10 minutes
15-20 minutes + 10 minutes cooling time
Super Easy
  • Preheat the oven to 180 degrees Celsius and line a tray with baking paper.

  • In a bowl, mix together all of the cookie ingredients until you have a soft, workable dough.

  • Roll this mixture out between two pieces of baking paper until a few mm thick. Make sure all of the biscuits are even.

  • Cut out 8 round biscuit shapes and set aside 4. With the other 4 biscuits cut out the middle and then place all of the biscuits on the tray and bake for 15-20 minutes until well done but soft.

  • Whilst the cookies bake, make the chocolate cream filling.

  • Once the cookies have cooled for 10-15 minutes, spread a thick layer of the chocolate cream filling over the base of the biscuit (the one without the hole). Place the biscuits with the hole in the middle on top of the base and then sandwich together.
