Christmas chunky cranberry cookies

These gluten free Christmas cranberry cookies are my new favourite! They are the perfect afternoon treat for you and your family to enjoy. I love these cookies straight from the oven with a big mug of warm cashew milk and maybe a side of millionaire bites or four! It is the best way to watch a Christmas film when snuggled up on the sofa. One of the best things about this recipe is that they are so simple to make. Another great thing is that they are very kid friendly. My nieces love helping me in the kitchen and they love these cookies as well. This is a quick Christmas recipe that you must try.

Cranberry cookies

  • 180g oat flour (1 1/2 cups)
  • 230g jumbo oats (2 1/2 cups)
  • 200ml maple syrup (1 cup)
  • 100g cashew butter (3/4 cup)
  • 110g cranberries (3/4 cup)
  • Pinch of sea salt

method
  • Preheat the oven to 180 degrees Celsius and line a baking tray with greaseproof paper.

  • Add all of the cookie ingredients into a bowl and stir thoroughly to ensure that everything is well mixed and that the cranberries are evenly distributed.

  • Taking a spoonful of mixture. Place this on the baking tray and gently flatten. Repeat this process until all of the mixture has been used up.

  • Place this in the oven for 15 minutes until golden but still soft. Allow these to cool for 5-10 minutes and then dig in. We love these with a hot cup on tea – yum!
