Lemon, Coconut and Almond Truffles

The past few weeks have been so busy for me which has been really good fun, but after working a few too many late nights and with the change in weather, I’ve been left feeling a bit unwell! These balls have been the perfect remedy; I made up a big batch at the beginning of the week and have been taking them on the go with me for an energy boost in between meetings and in the evening with some lemon and ginger tea!

  • Put all the ingredients into a food processor and blend until the mix comes together. There should still be some chunks of almonds, but if you want less of a crunch, pulse the almonds in the food processor, before adding the other ingredients.

  • Roll into balls – the mix should make approximately 20.

  • Roll in chia seeds or desiccated coconut, if using.

  • Store in the fridge for a week or two.
