Mango and Coconut Porridge Muffins

I have quite a few varieties of porridge squares up on the blog now and I eat them so much that I am always thinking up new flavours! I also wanted to try them out as muffins as I thought that a crispy outside with a softer middle would be so amazing and I wasn’t wrong! These mango and coconut muffins may be one of my favourite yet! I now need to go back through all my old porridge square recipes and see if I can make them into muffins because they are just so good like this.

method
  • Preheat oven to 180 degrees celsius

  • Chop the mango into small chunks, removing the skin.

  • Add all the ingredients into a bowl and mix it together.

  • Spoon it into muffin tins (I used the silicone ones but if you don’t have these grease or line your tin before spooning it in)

  • Bake in the oven for 30-40 minutes until the top is starting to go brown and slightly crispy.

  • Leave to cool in the tin.
