Peanut Butter Berry Jam Cups

This Vegan Peanut Butter Berry Jam Cups recipe is super easy to make, plant-based and gluten free. This weekend indulge in a heavenly warm Peanut Dunx cup filled with spiced berry jam.

Oat Cup

  • 70g oat flour / blended oats
  • 110g porridge oats
  • 50g coconut sugar
  • 135g Peanut Drizzle Dunx Dip
  • 75g maple syrup
  • 30g oat milk
  • 1 tsp cinnamon
  • Pinch of sea salt

Berry Jam

  • 100g frozen berries
  • 25g coconut sugar
  • 3 tbsp chia seeds

method

1. Pre-heat the oven to 180°C and line a muffin tin or prepare a silicone muffin tray.
2. Start by making the jam. Add the frozen berries and coconut sugar to a saucepan on a low heat. Stir this until the berries warm. Once the berries and sugar are warmed, take it off the heat and add the chia seeds. Mix well to ensure that the chia seeds are distributed evenly through the berry mixture. Leave this to the side to cool slightly. It will thicken as it cools.
3. Moving onto the oat cup – in a bowl mix together all of the ingredients.
4. Taking handfuls of the oat cup mixture, press it into the prepared tray to make a cup. Put a spoonful of the jam inside the cup and then cover with more of the oat mixture
5. Continue this process until you have used all of the flapjack mixture and jam.
6. Bake for 10-12 minutes.
