Easy Chunky Peanut Butter Granola

This easy chunky peanut butter granola is a great staple to always have in your cupboard. It can brighten up any breakfast and makes the perfect pick me up snack. Whip it up in only a few minutes and leave the oven to do the rest (whilst the delicious peanut butter scent fills your house). We managed to gobble up two batches in record time in the office, so it’s safe to say that it was a success. As you can see from the photos, we went crazy on the toppings; raspberry compote, salted caramel, cacao nibs and desiccated coconut. Delicious!

Granola

  • 140g unsalted smooth peanut butter (1/2 cup)
  • 125ml maple syrup (1/2 cup)
  • 1g salt (1/2 tsp)
  • 270g oats (3 cups)

method
  • Turn your oven on to 180 degrees.

  • Mix the peanut butter, maple syrup and salt in a mixing bowl until it’s combined. Add the oats and stir through thoroughly ensuring all the oats are coated in your mixture.

  • Put your oat mix on a baking tray and spread it out. Bake for 10 minutes and stir it, then for another 10 minutes and stir it again and finally to bake for another 5 minutes. Your granola should now be golden coloured but will still be soft. Take it out of the oven and leave it to cool completely which will firm it up, leaving it crunchy. Transfer it to a jar and keep it in your cupboard.
