Raw Gingerbread Balls

These raw gingerbread balls are one of my favourite creations. I am still amazed at how quick and simple they are to make, as they are honestly one of the yummiest things I’ve eaten. Even if you’re not a ginger fan, you can adjust the amount depending on your own tastes, but I’m a bit of a ginger fiend! I have to admit that I could gobble a whole bowl, but as a fun way to serve them I’ll put them on the end of sticks so they look like cake pops!

ingredients

Gingerbread ball

  • 3 teaspoon ground ginger
  • 100g ground almonds
  • 100g oat flour
  • 2 tablespoons coconut oil - melted
  • 5 tablespoons maple syrup

Raw Chocolate

  • 4 tablespoons coconut oil
  • 2 tablespoons maple syrup
  • 8 tablespoons cacao powder
  • pinch salt

method
  • Mix mix all of the ball ingredients together in a bowl.

  • Roll into balls and refrigerate.

  • In a Bain marie melt the coconut oil for the raw chocolate.

  • Add the other ingredients and mix until smooth.

  • Dip the balls into the chocolate and refrigerate until set.

  • Keep stored in the fridge.
