Salted Peanut Butter & Maca Fudge

had never made fudge until yesterday, and now after trying this recipe I think this may be my new thing!!!

Whenever I get a little bit hungry and fancy something sweet, I always reach for my nut butter. Dates stuffed with peanut butter is one of my favourite snacks- the taste combination of the two is just perfect. So I decided to mix the two and make my go-to snack a little more interesting!

You will all see as I continue to post recipes on my blog that I love to use maca in my baking. Maca is a root vegetable originally from the Ande mountains in Peru. Maca has such amazing health and healing properties that it is often referred to as the ‘Peruvian Ginseng’. It is rich in calcium, phosphorus, magnesium, potassium, vitamins B1, B2, C, E and is known for its ability in balancing hormones. Maca is such a versatile ingredient to use in baking- and I just can’t get enough of it. I added it in this recipe to give the fudge an extra richness, and it works like a dream!!!

The best thing about this recipe is just how simple it is to make. There is no need for any equipment like a food processor. Just simply mix all ingredients in a bowl, spread evenly into a brownie tin and leave to set in the freezer. They’re the perfect healthy sweet treat! I love enjoying these straight out the freezer or fridge so they are really cold and gooey! Happy Friday everyone xxx

  • Mix all ingredients together well

  • Line a brownie tin with grease-proof paper

  • Spread the mixture evenly across the tray

  • Leave to set in the freezer for at least one hour.

  • Best served straight out of the freezer/ fridge
