January has arrived, again! Doesn’t each year seem to come around faster and faster? I’ve seen so many people on Instagram sharing their goals to become a better, healthier person. One thing I think is so important, is balance. I don’t believe in restricting yourself of anything you really want. So this year I’m going to continue working out at my favourite studios, working hard on growing Livia’s Kitchen and enjoying all of my favourite gluten and dairy-free sweet treats.
From breakfast bars to afternoon cookies here are 8 of my favourite sweet vegan snack recipes to try this January. I hope you enjoy making and eating them as much as I do!
Espresso Breakfast Bars
If you want to mix up your breakfast, these are perfect! I love these when I fancy a change from my usual porridge bowl. The combination of sticky coconut caramel and espresso is so delicious. If I know I’ve got a busy week ahead, I like making a big batch on a Sunday and keeping them in the fridge for a quick on-to-go breakfast.
Vegan Jaffa Cakes
These tangy orange and dark chocolate Jaffa cakes are the absolute dream. Jaffa cakes were one of my favourite treats before I found out about my intolerances. So you can imagine how happy I was when I created this gluten and dairy-free version. They take a bit of time to prepare but SO worth it.
Ferrero “Raw”chers
The perfect sweet vegan snack to satisfy sweet cravings? These fudgey truffles with a hazelnut middle and cacao coating. They only take 20 minutes to make, plus setting time so great if you are short of time. They last for about a week in the fridge too so perfect for making in batches.
Blueberry and Coconut Cookies
These cookies are a delicious combination of vanilla, blueberry and coconut. They are amazingly crunchy with a slightly softer centre. I absolutely love them with a cup of tea in the afternoon. These will also make a yummy breakfast snack.
Salted Peanut Butter Slab
Who doesn’t love gooey salted peanut caramel and chocolate? These were the inspiration behind my Raw Millionaire Bites. I have to warn you though, it is very easy to devour the whole tray very quickly. Trust me, between three of us in the LK office, we demolished a whole tray in one afternoon. They are totally worth it though if you’re in need of a treat.
Chocolate Almond Butter Flapjacks
These gluten and dairy free oat flapjacks are a delicious sweet vegan snack. Using almond butter instead of dairy butter ensures that the gooey sticky texture is not lost. This recipe also takes less than 30 minutes to make. What more could you want in a snack?
Oat and Tahini Balls
These pop-in-your-mouth oat and tahini balls only take 15 minutes to make so are the perfect quick snack. They are sweetened with all natural ingredients such as date, coconut and vanilla and are so delicious. If you want a snack that isn’t chocolate based I really do recommend these. I love taking a couple to work to keep in the fridge so they are at hand if I need an afternoon sweet snack.
Salted Caramel Popcorn
Salted caramel popcorn is a great snack for a cosy January night in front of the TV. This recipe is delicious and super easy to make. It went down an absolute treat when I first made it for friends.
