Almond Butter Chocolate Biscotti

Ingredients:
- 15g coconut oil (melted, 1 tbsp),85g almond butter (1/3 cup),80ml maple syrup (1/3 cup),110g ground almonds (1 cup),70g buckwheat flour (1/2 cup),8g cacao powder (1 tbsp),A pinch of salt,55g chopped chocolate
- 50g chocolate,1 tbsp roasted chopped almonds

Method
Makes 20 biscottis (or 5 whole cookies).
Pre-heat the oven to 180 degrees Celsius/350 degrees Fahrenheit.
Mix coconut oil, almond butter and maple syrup in a bowl.
Add the ground almonds, buckwheat flour and salt and mix until everything’s combined.
Lastly add the cacao powder and chopped chocolate and stir carefully until it’s incorporated but not completely combined.
Shape 5 cookies and put them on a lined tray. Bake for 15 minutes (if you want to make biscotti or bake for 12 minutes if you want just cookies).
When your cookies are done, leave them to cool completely then cut each cookie into 4 sticks.
Melt your chocolate and dip one side of each biscotti in to it. Put the dipped biscotti on a tray lined with parchment and sprinkle on some chopped almond pieces and any other toppings you wish. Continue until all of the biscotti are dipped and decorated.
Enjoy straight away or store in an air-tight container for up to 3 days.
