Almond and Raisin Cookies

This gluten free almond raisin cookie recipe is so simple but so delicious. I love these straight from the oven and dunked in warm almond butter - yum! They are soft, chewy and so moreish, everyone in my family loves them, especially with a nice cup of tea. When I am with my nieces, I love to bake, but it's not always easy! So I love having easy recipes like this on hand that we can make together. Although there are lots of messy hands, it's so much fun and these delicious cookies go down so well. If you fancy adding a twist to these, why not throw in some chocolate chunks.

Ingredients:

    Cookies

  • 180g Oat Flour,230g Jumbo Oats,200ml Maple Syrup,100g Almond Butter,110g Raisins,Pinch of Sea Salt

Method

  • Preheat the oven to 180 degrees Celsius and line a baking tray.

  • In a bowl mix together all of the ingredients, making sure that they are fully combined. This will be a sticky texture.

  • Take a tablespoon of the mixture and roll it into a ball in your hand. Flatten it gently and then place on the tray.

  • Once you have used all of the mixture, place them in the oven to bake for 15 minutes until golden but still soft.

  • These best served warm from the oven, but they are delicious any time of day.
