Blackberry and Apple pie

This is the most delicious autumnal treat - there really is nothing better than blackberry apple pie. The pastry is super simple to make and you can use the leftovers to decorate the top however you like. We decided this would be the perfect celebration of pastry week on The Great British Bake Off. Ingredients:

    Pastry

  • 70g Coconut oil,400g Oat flour,180ml Maple Syrup,1 Tsp Vanilla powder
  • Fruit Filling

  • 1,140g Green apple (we used Granny Smith),380g Blackberries,4 Tbsp Maple syrup,60g Coconut sugar

Method

  • Preheat the oven to 180 degrees Celsius and grease a pie dish (we used 10”) with coconut oil.

  • Start by preparing the fruit. Peel and chop the apple into small pieces and place in a saucepan over a medium heat. Add in the maple and coconut sugar and stew until the apple starts to break down. Sit this occasionally to ensure it doesn’t stick to the bottom. This will take around 15 minutes.

  • As this thickens, add in the blackberries and stir. Allow this to simmer for a further 5 minutes.

  • In a bowl mix the pastry ingredients together until it has fully combined. Split this into two and roll half of the mixture. This needs to be big enough to cover the base and the sides of the dish.

  • Place the pastry into the dish and gently press around the edges to ensure it is evenly covered. Place this to the side whilst you cut out the stars.

  • Roll out the other half of the pastry and cut out a variety of star shapes. Place these on a lined baking tray.

  • Put both the piecrust and stars into the oven for 12 minutes until golden.

  • Take the crust out of the oven and put the fruit into the middle. Place this back into the oven for a further 3 minutes to finish off.

  • Leave the pie to cool for 10 minutes and then assemble the top. Decorate the pie with the different stars.

  • This is best served warm – so tuck in!
