Coffee, vanilla and chopped date Cookies

When afternoon hunger hits, and energy levels drop, these are just the perfect snack! I wanted to share this recipe with you today as it is so grey and miserable outside, and digging into cookies like these always make a dreary day better. I don’t actually drink coffee- just because I find them too strong, but I do LOVE coffee flavoured snacks, and these are a classic example. I love the slightly crunchy outside and the softer centre that these cookies have, whilst the chopped dates add the perfect amount of sweetness and a little chewyness!. These are so great as an afternoon snack, but also such good breakfast or mid-morning options.

Prep: 5 minutes

Cook: 10 minutes

Total: 15 minutes

Ingredients:

Method

  • Preheat oven to 180 degrees Celsius.

  • Line a tin with greaseproof paper.

  • Mix all the ingredients together in a bowl and pour into your tin.

  • Bake for 10 minutes and then leave to cool for 5-10.
