Spiced Apple crumble muffins

In Autumn, there is nothing that we love more than warm apples. So these dairy free spiced apple crumble muffins really hit the spot! We love baked apples, apple tarts, pies, crumbles, you name it, we love it. We put our favourite ingredients together (apples, salted caramel and crumble) to create this delicious muffin, so it's really no surprise that we are obsessed! These spiced apple crumble muffins are the most amazing treat that really satisfy your sweet tooth but could also be the perfect breakfast treat. We love ours hot out of the oven with a big spoonful of coconut yoghurt and some berry compote. Trust us, these are the best Christmassy treat, I cant wait for you all to try!

Ingredients:

    Muffin

  • 250g Apple puree,250g Ground Almonds,50g Buckwheat flour,250ml Maple syrup,25g Coconut oil,2 teaspoons Cinnamon,Pinch of sea salt
  • Caramel

  • 100g Medjool dates (pitted),1 teaspoon Cinnamon,½ cup Almond Milk,1 Tbsp Almond butter,Pinch of sea salt
  • Crumble

  • 70g Oats,35g Oat flour,25ml Maple syrup,20g Almond butter,½ Tbsp Coconut oil,Pinch of sea salt

Method

  • Preheat the oven to 180 degrees Celsius and grease a silicone muffin tray with coconut oil.

  • On a low heat, melt the coconut oil. Add this to a bowl alongside the rest of the muffin ingredients and stir until it has fully combined.

  • Spoon some muffin mixture into the muffin tray, filling up half of each hole. Place this to the side whilst you make the caramel.

  • In a food processor, blitz the caramel ingredients until it is a think caramel. Roll the mixture into balls and place in the muffin holes then use the rest of the muffin mixture to cover.

  • Place this in the oven to bake for 35-40 minutes or until golden and firm.

  • Whilst this bakes, make the crumble. Mix the crumble ingredients into a bowl and then place on a lined baking tray. Put this in the oven and allow it to bake for 15 minutes or until golden and crunchy.
