Espresso breakfast bars? Sign me up. This recipe goes out to all the caffeine monsters and organised meal prep'ers. Whip up a batch of these on a Sunday evening and breakfast for the week is sorted. These are the most delicious start to your morning. The sticky coconut caramel paired with the espresso is heavenly. For a more indulgent morning, add our Salted Peanut Butter Million Squares. Ingredients:
- 3.5 cups oat (280g),5 tbsp cashew butter (175g),1 tsp vanilla,¼ cup coconut oil (15g),250g Medjool dates (11 dates),1/3 cup cashews (50g),3 tbsp coconut sugar (30g),5 tsp instant coffee,3 tbsp maple syrup,1/3 cup desiccated coconut (25g),Pinch of Sea Salt,Salted Peanut Butter Million Squares

Method
Line a baking tray and set this aside.
Add all of the ingredients to the food processor and blitz until everything comes together in a sticky mix.
Chop the Salted Peanut Butter Million Squares into chunks. Add these to the mixture.
Spread this into the tray and place in the fridge to firm up.
Cut up and enjoy!
