Breakfast Boulders

This gluten free breakfast boulder recipe is one of my absolute favourites! They are the most delicious, golden, crunchy clusters of heaven - I really cannot get enough of them! A bowl of fresh berries, crunchy clusters and creamy home made almond milk is the best way to enjoy these. These boulders are also so versatile and work well with so many things, the possibilities are endless! They can be stored in an airtight container for up to a week so you enjoy them later. One of our favourite ways to use them is as a topping on a thick berry smoothie bowl or even sprinkled (or piled) on top of your morning porridge. Sometimes, if we are peckish, we love to pour some into a bowl and nibble on them throughout the day. Method

  • Preheat the oven to 180 degrees Celsius and line a baking tray with baking paper.

  • Add all of the ingredients to a bowl and mix.

  • This should form a loose, boulder like crumble texture, with some smaller bits and some large.

  • Place these onto the tray and bake for 25-30 minutes until they are crunchy and golden.

  • We love these on the side of a Smoothie bowl or on their own as a quick snack.
