Caramel sandwich cookies

I am so excited to share the recipe for these gluten free caramel sandwich cookies, they are the best! These are quite possibly the easiest cookies I have ever made – you can literally throw all ingredients in a bowl, mix with your hands, shape with your hands and they’re done! No baking needed! These cookies are the perfect pick-me-up afternoon snack and are amazing with a nice cup of tea! A great thing about these ‘cookies’ is that can be made using cupboard staples that you always have lying around. The oats combined with the date syrup creates a delicious, gooey caramely taste, which works so well with the subtle spice from the cinnamon. Also, these are such a great autumnal treat that my little nieces love, so they are definitely child friendly.

  • 1 cup ground flaxseed (110g),2 cups rolled oats (170g),1/2 cup date syrup (140g),1/4 teaspoon salt,3 tablespoons coconut oil , slightly melted (70g),1 tablespoon ground cinnamon
  • Almond Butter Filling

  • 3 tablespoons almond butter,2 teaspoons ground cinnamon,1 tablespoon coconut palm sugar (optional for a little extra sweetness)


  • Put all of the cookie ingredients into a mixing bowl. Using your hands mix together well until all combined and sticky.

  • Using your hands, roll out a small cookie shape. To do this, make a big marble size ball of mix and then roll and press into a cookie shape. For one cookie, you need two of these. You need to put a lot of pressure on them with your palms to make them nice and flat.

  • Once all mixture has been used and all cookies have been shaped, set them aside and mix together all of the ingredients for the filling.

  • Spread the almond butter using a knife on one cookie and place another cookie on top. Repeat until they are all filled.
