Christmas chunky cranberry cookies

- 180g oat flour (1 1/2 cups),230g jumbo oats (2 1/2 cups),200ml maple syrup (1 cup),100g cashew butter (3/4 cup),110g cranberries (3/4 cup),Pinch of sea salt
Preheat the oven to 180 degrees Celsius and line a baking tray with greaseproof paper.
Add all of the cookie ingredients into a bowl and stir thoroughly to ensure that everything is well mixed and that the cranberries are evenly distributed.
Taking a spoonful of mixture. Place this on the baking tray and gently flatten. Repeat this process until all of the mixture has been used up.
Place this in the oven for 15 minutes until golden but still soft. Allow these to cool for 5-10 minutes and then dig in. We love these with a hot cup on tea – yum!
