Gluten Free Mince Pies

Ingredients:
- 50g coconut oil 50g coconut oil (1½ tbsp),200g oat flour (1 ¾ cup),50ml maple syrup (¼ cup),2 tbsp ginger
- 4 apples (we used Granny Smith),Juice and zest of 4 clementines,1 tsp mixed spice,30g coconut sugar (1 ½ tbsp),75g raisins (¼ cup),1 tsp ground cinnamon,Pinch of sea salt

Method
Preheat the oven to 180°C and line a brownie tin with baking paper.
Peel and dice the apples into small cubes. Add the apple cubes to a saucepan over a medium heat and simmer until it they begin to soften. At this stage add in the clementine juice, zest and raisins. Continue to simmer until it has softened a bit more, but ensure that are still small pieces of apple. Remove from the heat leave to cool completely.
Add all of the ingredients for the pastry into a bowl and stir until fully combined. Roll this out between two pieces of baking paper until it is a few millimetres thick.
Cut out 12 circles for the pies and the lids.
Put 6 of the disks into a greased silicone muffin tin. Spoon some of the filling (make sure this is cool otherwise it will melt the pastry) and then place the mince pie lid on top. Repeat the process until you have 6 mince pies ready for the oven.
Prick the lids of the pies to release the heat.
Place the mince pies into the oven for 40 minutes until golden then enjoy!
