Raspberry Jam Crumble Bars

Our new favourite thing in the Livia's Kitchen office are these gluten free raspberry jam crumble bars. Is there anything better than a hot jammy crumble bar? If you are looking for a breakfast/morning snack/afternoon treat, these are the best! A big dollop of homemade dairy-free ice cream and a cup of tea works perfectly with these bars.

  • 1 + 1/4 cup (125g) oat flour,1 + 1/4 cup (125g) rolled oats,3/4 cup maple syrup (80ml),1 Tablespoon (30g) coconut oil,½ tsp vanilla powder
  • Jam

  • 3 cups (300g) frozen raspberries,5 Tbsp maple syrup (add more if you prefer it sweeter),6 Tbsp chia seeds
  • Crumble

  • 1 cup (100g) jumbo Oats,1/2 cup (50g) porridge oats,1/4 cup maple syrup (50ml),1/4 cup cashew butter (55g) ,1 Tablespoon coconut oil (30g),Pinch of sea salt


  • Preheat the oven to 180 degrees Celsius and line a brownie tin with baking paper.

  • Add the raspberries and maple syrup into a saucepan over a medium heat and simmer until it has turned into a raspberry sauce (add more maple syrup at this point if you would prefer it to be sweeter). Mix in the chia seeds and let this simmer to thicken and then take off the heat.

  • Add all of the ingredients for the base into a bowl and stir until fully combined. Spread and flatten this into the tin and bake for 15 minutes. Once this has baked place this to the side to cool.

  • To make the crumble, add the ingredients into a bowl and stir well. Pour the crumble mixture onto a lined baking tray and bake until this is golden and crunchy.

  • To assemble, spread a thick layer of jam over the base and then top with the golden crumble. Cut this up into squares or rectangles and enjoy!
