Salted Peanut Chocolate Chip Cookies

These gluten free salted peanut chocolate chip cookies are the perfect afternoon treat. They are so easy to make and perfect for making with the little ones to keep them busy. Who would have thought that just 6 ingredients could come together to make such a dreamy cookie? In this recipe we use a combination of naturally gluten free buckwheat flour and ground almonds to achieve the perfect soft texture. The saltiness from the peanuts balances perfectly with the sweet dark chocolate making them so delicious. We really struggled to have just the one each when we first made them in the Livia's office! Ingredients:

    Cookies

  • 2 cups ground almond - 250g,½ cup buckwheat flour -75g,½ tbsp coconut oil – 10g,¼ cup maple syrup – 70g,¼ cup smooth peanut butter – 55g,½ cup raw chocolate – 105g,Generous pinch of sea salt

Method

  • Preheat the oven to 180 degrees Celsius and line a tray with baking paper.

  • Add all of the ingredients (excluding the chocolate) into a bowl and stir until fully combined. Chop the chocolate into small squares and then add to the cookie mixture. Fold the mixture well with a spoon to ensure that the chocolate is evenly dispersed.

  • Taking a tablespoon at a time, roll the mixture into a ball and then gently flatten onto the baking tray.

  • Place into the oven and bake for 20 minutes or until golden.

  • We love these warm straight out of the oven with a cup of tea.
