Hot Cross Buns

Toasted hot cross buns always remind me of Easter and Spring and so I was desperate to make my own version to enjoy this year. These ones are really soft and absolutely delicious! Spread them with lots of almond butter, peanut butter, jam or whatever is your favourite! I put chopped up chocolate in mine for extra indulgence but this step is optional.

Ingredients:

    Buns

  • 95g maple syrup (1/3 cup)
    70g apple sauce (1/4 cup)
    Zest of 1 orange
    165g ground almonds (1 ½ cups)
    70g buckwheat flour (1/2 cup)
    10g mixed spice (4 tsp)
    5g arrowroot powder (1 tsp)
    35g raisins (1/4 cup)
    35g chopped chocolate (optional)
  • Cross glaze

  • 1 tsp arrowroot powder
    1 tsp maple syrup
    2 tsp water

Method

  • Turn your oven on to 180 degrees Celsius.

  • Mix maple syrup, apple sauce and the zest of an orange.

  • Mix ground almonds, buckwheat flour, mixed spice, arrowroot powder. Add the raisins and chopped chocolate and mix again.

  • Combine the wet and the dry ingredients and mix until it forms a paste/dough. This is easiest to do by hand.

  • Shape it into 6 balls and put them on a baking tray. Bake for 20 minutes.

  • Once the buns have cooled make the glaze (to make your crosses) by mixing the ingredients and pipe crosses onto your buns.
