Jammy Dodger
Jammy Dodgers were one of my absolute childhood favourites so you can imagine how excited I was to discover these sitting on the office table one afternoon!! They're the most delicious (and simple) date middle with a sweet vanilla biscuit, perfect for that 3pm dip - You may even trick your office into believing they're the real deal (if you're will to share that is!)

Ingredients:
- 2 1/2 cups Oat Flour (255g),3/4 cup rolled oats (60g),2 tablespoons coconut sugar (25g),1/2 cup maple (100ml),2 1/2 tablespoons coconut oil (50g),1 1/2 teaspoons vanilla powder,pinch of salt
- 14 medjool dates - pitted,12g of freeze dried raspberries,Pinch of vanilla powder

Method
Preheat the oven to 180 degrees celsius and line a tray with greaseproof paper.
Melt the coconut oil over a low heat and then add it to a big bowl with all of the other biscuit ingredients.
Using a wooden spoon, or your hands, mix well until the mixture is combined.
Gather the dough together into a ball and then roll it out until it is roughly 4mm thick. Using a cutter, cut out 18 disks, re-rolling if necessary. Once you have 18 cookies, cut small stars or circles from the centre of 9 and place into the oven to bake.
Whilst the cookies bake, add the pitted dates to the food processor along with all of the other ingredients and blend until smooth.
Once the cookies have cooled, add a ball of raspberry paste to the centre of each of the whole biscuits and top with one of the ones with the cut out centres, pressing down to ensure it spreads to the edge.
