Matcha Granola Bars

Whether or not you’re a matcha fan, you’ll love these granola bars! They’re wonderfully sweet, whilst also having a great texture from the brown rice puffs and pumpkin seeds. I love eating them for breakfast, as they’re packed with goodness to really set you up for the day. Saying that, I have been known to devour 3 in the space of 10 minutes when I hit that 4pm energy slump too!


Prep: 15 minutes (1 hour setting)


Total: 1 hour 15 minutes




  • Start by adding the coconut oil, cashew butter, vanilla, rice syrup and matcha powder into the food processor and blending until combined and smooth.

  • Add the oats and pulse until combined.

  • Pour the mixture into a bowl and add in the rice puffs, flaked almonds, seeds and dates and mix with a spoon or your hands until it comes together.

  • Spoon the mixture into a lined baking tray, flatten down with the back of a spoon and leave in the fridge for an hour or two to set.

  • Slice into squares and store in the fridge.
