Peanut Butter Celebration Cake

This chocolate and peanut butter birthday cake is so simple, gooey and delicious. Nowadays, it is rare for me to turn up anywhere without some sort of treat. Meetings always involve a tub of Raw Millionaire Bites or a creation from the blog and birthdays are no different! This week, one of my closest and oldest friends was celebrating her birthday and I knew that on this occasion I really had to create something extra special to send to her. Cakes can be one of the trickiest things to bake. Without eggs and baking powder, it can be really hard to achieve a nice fluffy texture. Ingredients:

    Cake

  • 300g Peanut butter (1 cup + 1 tbsp)
    185ml maple syrup (1/2 cup + 1/4 cup)
    185ml almond milk (1/2 cup + 1/4 cup)
    150g ground almonds (1 cup + 1/3 cup)
    30g cacao powder (1/4 cup + 1 tbsp)
    35g buckwheat flour (1/4 cup)
    A pinch of salt
  • Frosting

  • 100g smooth peanut butter (1/3 cup)
    60ml maple syrup (1/4 cup)
    15g cacao powder (2 tbsp)
    A pinch of salt

Method

  • Preheat the oven to 180 degrees Celsius.

  • Grease a 7” tin with coconut oil.

  • Mix the peanut butter, maple syrup and almond milk in a bowl.

  • Add the ground almonds, cacao powder, buckwheat flour and salt and combine it all.

  • Pour it in your greased tin and bake for 30-35 minutes.

  • Whilst the cake is cooling, mix all the frosting ingredients together.

  • Spread the icing over the cooled cake and serve.
