Strawberry and Apple Galette

We love a tasty galette in the office and this Strawberry and Apple Galette is all we want to be eating in August! The apples are softly baked with coconut sugar, which brings the most perfect caramel taste to them. They are then topped with thinly sliced strawberries that add a fresh burst of colour to this dessert. Covered with a crunchy but sweet pastry shell this galette will not disappoint! Ingredients:

    Pastry

  • 50g melted coconut oil (1/4 cup),125ml maple syrup (1/2 cup),60g porridge oats (2/3 cup),150g buckwheat flour (1 cup),55g oat flour (1/2 cup)
  • Toppings

  • 2 apples,2 tbsp coconut sugar,200g strawberries

Method

  • Serves 8 people.

  • Pre-heat the oven to 180 degrees Celsius/350 degrees Fahrenheit.

  • Mix all of the ingredients for the pastry in a bowl. Set to the side while you prepare the fruit.

  • Slice the apples thinly and place them in a tin together with the coconut sugar. Give this a stir and bake the apples in the oven for 10 minutes until they start softening. If it starts looking dry whilst baking you can give it an extra stir.

  • Whilst your apples are cooking, slice the strawberries thinly.

  • Roll out your pastry on a lined tray. Shape it into a circle and flatten it until it’s about 30cm in diameter.

  • Get the apples out from the oven and place them in a circle on your pastry. Leave about 3cm on each side (that will later be folded over the fruit).

  • Place your sliced strawberries on top of the apples. Fold the pastry over the fruit, it will crack slightly but wherever you see a crack simply press down the pastry until it sticks together again.

  • Bake for 25 minutes until the pastry is golden.

  • Enjoy hot straight from the oven or store in an airtight container in the fridge for up to 3 days. Re-heat in the oven to make it crispy again.
